ABOUT US Our goal and purpose is to create a perfect cup of coffee, whether an espresso-based drink, or a regular cup of joe. We concentrate first and foremost with the sourcing of our beans, which are specialty grade and, as much as possible, Fair Trade certified. We know exactly the farm and co-op that our beans come from, how they were grown and processed, and what importers handled them. After we acquire the beans from the importers, we roast them in-house in our Ambex roaster, using techniques we learned from one of the top roastmasters in the country. From the roaster we deliver them up to you as quickly and freshly as possible. The roasted beans travel all of 30 feet from the roaster to your cup! Not only do we source naturally grown, specialty grade beans, we aim to provide our customers with a divine drink experience. We're striving, as they say, for "god in a cup." How do we do this? We train all of our employees for weeks in the craft of making beautiful coffee drinks. They learn how to pull a properly timed shot of espresso, foam milk to the correct temperature and texture, and combine and present the two with attention to detail. We brew our coffee using the extraction method, which combines the traditional drip brew with the French press method of soaking the coffee to draw out flavorable oils. Are we coffee purists? Absolutely. Are we coffee snobs? Perhaps so. But we also believe that people should be able to enjoy coffee any way that they please. Some of our customers want straight espresso in a demitasse cup. Others want a fancy flavored latte with whip cream. We're ready and happy to accommodate both of these extremes, because we want you to love coffee. We certainly love our customers!
