Our Coffees: At The Red Cat, we deal only in specialty-grade coffees that are grown according to the highest standards of sustainability and fairness. We have long maintained our commitment to the Fair Trade model, which guarantees fair financial returns to farmers and their workers, but we recognize that the paradigm for producing great coffee in a way that is friendly to worker and the environment varies from region to region, even farm to farm. That's why we have taken a greater interest in visiting the coffee-growing regions ourselves and building direct relationships with those estates with the best practices. What we hope is that we can provide you with exceptional coffees from exceptional farms.

THE RED CAT ESPRESSO BLEND: Rather than resorting to one of the pre-mixed blends on the market (Daterra, etc.), we have crafted our own unique blend that we roast in-house and serve exclusively at The Red Cat. People rave over our espresso blend. In creating our blend, we've eschewed the pungent bitterness that makes some coffee drinkers shy away from lattes. We've never been fans of the overly-mild espresso that disappears in a milk-based drink either. Watch us pull our shots. You'll see a rich crema in the shot class that translates to full body in your mouth. You'll taste a subtle sweetness, some hints of dry cocoa and fruitiness. Enjoy it by itself or in one of our signature lattes. |

BRAZIL BOB-O-LINK: The Bob-O-Link coffee is a blend created by Fazenda (farm) Ambienta Fortaleza, which lies in the Mountain Mogiana region of Brazil. The farm, a model of social, economic, and environmental sustainability, is owned by Marcos Croce and Silvia Barretto. This coffee is picked selectively and dried naturally. To the nose this coffee has a striking fruity aroma, reminiscent of berries and banana. Its taste is complex, with mild citric acidity, creamy consistency, chocolate notes and sweetness like marzipan. |

MOKHA JAVA BLEND: Mokha Java is the name given to the oldest coffee blend in the world. It consists of naturally grown beans from the region of Yemen (the port of Mokha) or Ethiopia combined with those from Indonesia (Java). For our Mokha Java blend we use Fair Trade certified beans from the highly regarded Gayo Cooperative in Sumatra, Indonesia, together with an Ethiopian Harrar. The result is a full-bodied, dry fruity taste reminiscent of a Merlot wine. |

ETHIOPIAN HARRAR: Ethiopia is the birthplace of coffee, and one can still find the bushes growing wild there. The beans that come from the Harrar region exhibit qualities unlike any other in the world. The soil together with the dry-process technique creates a dry edge and heavy body, an exotic, almost wild taste, along with a winy acidity. Harrar is notorious for its hint of blueberry jam and spices (cardamon, cinnamon) in the cup. The aroma is heady and pungent and the taste lingering. |
